Grinding

The great advantage to grinding your coffee at home is that you can grind only what you will immediately brew to avoid losing flavor, freshness and aroma. Follow these basic guidelines when grinding at home, depending on your coffee maker:

Coarse	Percolator
Medium	Permanent filters
Finer	Basket filters
Fine	Cone-shaped filters
Very fine	Espresso

Brewing

Always start with fresh coffee and cold, filtered or bottled water. Use 1-2 tablespoons of coffee for each six ounces of water depending on your preference. Remember to use quality paper filters designed to fit your brewer. Your brewer must deliver a steady supply of hot water and must be able to wet the entire bed of grounds thoroughly and evenly.

Avoid leaving your coffee on a burner after brewing as it will only keep its optimum flavor for up to thirty minutes. If your coffee maker doesn’t brew into an insulated carafe we recommend transferring it into one to keep it from burning. Always remember to clean your equipment.

Storage

You should store it in an airtight, light-free container in a cool, dark area or room. For instance, keep it in a ceramic canning jar in a pantry. We do not recommend refrigerating or freezing your coffee because it adds unwanted moisture.

The coffee is freshly roasted when you place your order and each bag makes 6-8 full pots of coffee depending on your taste and coffee maker. Whole bean coffee should be used within 3 weeks and ground coffee within 2 weeks so we recommend ordering one-two weeks worth at a time.
